I’m finally back! Starting a new job really threw me off. But let’s hope this post will get me back on track. Switching to this new position really helped my sanity. Not that I had much of it to begin with, but I’m glad to have some of it back. Between chasing down a raging toddler, spending time with Dev, new job, and the blog, I am pretty busy. Occasionally, I rely on energy bars because it is difficult to find time for a meal. I really like the Biohacker Bars because they are completely Certified Paleo. Meaning, I don’t have to sit here and worry if it is made with rat poison or styrofoam. Jamie, the creator of the Biohacker Bar asked whether or not if I could create a recipe with her bars. Challenge accepted! After some green smoke and a few minor fireworks, out of the mad lab comes the Paleo Witch Cookies!
What are Witch Cookies? They are an Italian inspired chocolate-almond cookie called the Strazzate. These are fantastic cookies for breakfast or afternoon tea. Americans rarely practice the art of afternoon tea. Every time I do it, I feel extra sophisticated. I feel like I’m in a nice suit in a well kept courtyard eating delicate cookies and sipping tea with my pinky in the air. In actuality, I’m probably in my robe committing gluten sin and eating Oreos.
Paleo Witch Cookies
2 – Certified Paleo Biohacker Bars (Roughly Chopped)
½ Cup – Almond Meal
1¼ Cup – Otto’s Natural Cassava Flour
½ Cup – Coconut Sugar
1½ Tbsp – Instant Coffee
¼ Tsp – Salt
¼ Cup – Slivered Almonds (Chopped)
¼ Cup – Enjoy Life’s Chocolate Chips
¼ Cup – Grass-fed Ghee
1 Tsp – Pure Vanilla Extract
¼ Cup – Strega Liqueur (Italian Witch Liqueur)
2 – Handsome Brook Farm Pasture Raised Eggs
1 Tbsp – Paleo Powdered Sugar For Dusting (Recipe Here)
You know I love talking ingredients, so let’s start before we put these “Witch Cookies” in the cauldron. Let’s start with the Biohacker Bars. The ingredients of the Biohacker Bars really help give these cookies its desirable texture. The next ingredient I want to touch on is Strega Liqueur. It is what gives these Strazzates their very distinct flavor. Strega is also known as the witch liqueur, the story behind it is fantastic and if you have the time, look it up. This is what brought me to the name Witch Cookies. Let’s get the cauldron heated up and make these bad boys!
Witch Cookies Instructions:
To make these Witch Cookies, start by setting up a double boiler. I use a sauce pan and a stainless steel mixing bowl. Put the Biohacker Bars, Grass-fed ghee, chocolate chips in the double boiler and wait for all the ingredients to heat up. Once heated, the Biohacker bar will melt and start incorporating into the ghee and chocolate chips (about 5-10 minutes). While you are waiting for it to melt, preheat your oven to 350°F.
Once the Biohacker mixture is fully melted, remove it from the heat. Pour in the rest of the ingredients except for the Paleo Powder Sugar. Mix everything together well. I used a wooden spoon, but feel free to use your choice of a hand mixer or stand mixer. You will end up with a fairly sticky dough. Line a cookie sheet with either a silicone mat or parchment paper. Take a heaping tablespoon of the dough and roll it into a ball . Set each of these balls an inch or so apart. Pop these babies in the oven for 15-18 minutes. Swish and flick! The cookies are done! Set the cookies on a wire rack to cool. Once they are cooled off, dust them with the Paleo Powder Sugar. Accio cookies! There you have it my friends, my Paleo Witch Cookies .
