The smell of sulfur and colorful smoke immerses the air. The sound of fireworks discharging loudly nearby, all the while faint pops echo in the distance. We are celebrating the 4th of July. For those readers that live in the U.S., what does Independence Day mean to you? To my little family, the holiday means the four F’s…Family, Friends, Food, and Fireworks. To Dev growing up in a small town, the family and fireworks aspect was most important. To me, in the city, it was a day with friends and food. We would BBQ all day long. For us in the Northern Hemisphere, no celebration in July is ever complete without ice cream. From Filipino Ube flavor to the Banana Split flavor by Blvd Ice Cream, I love them all. Let’s be honest here, everyone loves ice cream. If a person tells you they don’t like ice cream, you should seriously question their intentions and put on your tin foil hat because they are not from this planet. All this talk about ice cream means, you guessed it this week, we are making ice cream. Well, more like a frozen custard. I decided to bring BBQ and ice cream even closer together. I’ve smoked the gorgeous Georgia peaches I found at the local farmers’ market and created my Paleo Smoked Peach Brown Butter Frozen Custard.
Smoked Peach Brown Butter Frozen Custard? Absolutely! We bring the woodsy smoke flavor of the summer time BBQ and infuse them into sweet and tart peaches. Follow that up with buttery frozen custard and you have a little piece of summer heaven. I know what you are thinking, there is no way ice cream is Paleo. It sure can be, just check on JÖne’s Gelato. I will list out ingredients for those who eat dairy and those who are strictly Paleo. The best part is, you don’t even need an ice cream machine to make this Smoked Peach Brown Butter Frozen Custard.
Paleo Smoked Peach Brown Butter Frozen Custard:
3-4 – Semi-Ripe Georgia Peaches (Halved and Pitted)
1 Cup + 2 tbsp – Desert Farms Raw Camel Milk¹
2 Cups – 100% Grassfed Heavy Whipping Cream²
¾ Cup – Organic Honey
¼ Cup – Grassfed Salted Butter
4 – Handsome Brooks Pasture Raised Egg Yolks
1 Tsp – Pure Vanilla Extract
¼ Tsp – Vietnamese Cinnamon
Pinch – Nutmeg
Pinch – Allspice
Optional Equipment:
Smoker or Smoke Gun

I’m going to keep things fairly short and sweet this week. For this Smoked Peach Brown Butter Frozen Custard, things can be a bit technical but it will prevent you from making mistakes and having to waste ingredients. Speaking of ingredients, you are more than welcome to use whatever you see fit as far as the dairy goes. You can use regular heavy whipping cream and milk if you are not lactose intolerant. Just keep in mind that the fat and water ratio is crucial when it comes to great ice cream. That is why the ratio for the non-dairy options is different. As far as ingredients wise, pick the best yellow peaches you can find. If you opt for coconut cream, make sure you refrigerate it to separate it from the water. After it separates, strain the water out of it. Let’s get started on the Smoked Peach Brown Butter Frozen Custard!
Smoked Peaches Instructions:
You can’t have a Smoked Peach Brown Butter Frozen Custard without smoked peaches. I know many people do not have access to a smoker, smoke gun or tabletop smoker. Here is an article that shows how to do it without any of the extra gear. I used a horizontal offset smoker heated with charcoal and soaked peach wood chunks. I used very little charcoal as I did not need much heat, just enough to produce good smoke. My smoker never went pass 130°F. Half the peaches and toss them in ¼ Cup honey, cinnamon, nutmeg and allspice. Pour it into a tin pan or use aluminum foil to make a small tray. Put the peaches closer to the fire box and smoke it for 1 hour, flipping it halfway through. Once the peaches are done smoking, the skin should come right off. Peel the peaches and dice them into small pieces. While your peaches are smoking, let’s prepare the rest of the ingredients for the Smoked Peach Brown Butter Frozen Custard.
Brown Butter Frozen Custard Instructions:
First off, let’s brown the butter. Melt the butter in a small sauce pan over medium heat. My tip for brown butter is to heat it slowly and have a heat-proof container near by to pour the brown butter into. If you have the heat too high, it is very easy to burn the butter instead of browning it. Stir the butter occasionally until it starts to foam. Once it starts to foam, pay extra attention to the bottom of the butter. As soon as it starts getting slightly brown/caramel in color, remove it off the heat and pour it into the heat proof container. This will not allow the residual heat from the sauce pan to over-brown your butter. Set the butter aside and allow it to cool. Next step for the Smoked Peach Brown Butter Frozen Custard is to create the custard. In a food processor, blend together the milk, cream, brown butter, honey, and egg yolks. Heat the mixture in a double boiler until it reaches 170ºF while continuously stirring it. You do not want to overheat a custard or else you will end up with a bowl of scrambled eggs. Strain the custard into a metal mixing bowl sitting in an ice water bath. Mix in your vanilla extract and allow the mixture to cool completely.
The next steps for the Smoked Peach Brown Butter Ice Cream all depends on whether or not you own an ice cream machine. If you do, you want to pre-chill the custard and make the ice cream as directed by your ice cream machine’s manufacturer. While the ice cream is in a soft serve state, add in the smoked peaches. If you do not own an ice cream machine, follow this simple instruction from Food and Wine. It is super simple and very handy if you don’t own an ice cream machine. Instead of cherries and pistachios like in the video, you will be folding in the smoked peaches for my Smoked Peach Brown Butter Frozen Custard. This is not covered by the ingredients list above, but if you want, you can make a smoked peach reduction and serve it with the ice cream. It is super simple: smoke two additional peaches and slice them. In a skillet over medium heat, heat 2 tbsp butter, 2 tbsp honey, ¼ tsp lemon zest, ½ tsp Cinnamon, Crushed Pralined Pecans and sliced smoked peaches. Cook until most of the moisture is gone and the mixture is thick enough to coat the back of a spoon. That is it. Now that the Smoked Peach Brown Butter Frozen Custard is chilled, scoop, serve and enjoy with all your friends and family. Don’t be selfish, sharing is caring!
