How about it guys? In a week or so, many of us are going to be celebrating a marketing scheme of a holiday. The ONE day out of the year that we HAVE to treat our significant other nicely and shower them with fancy gifts. Wait… I thought that should be a regular occurrence instead of just one day out of the year. Anyhow, I’ll bite. Just because I’m fond of heart shape things (no, that doesn’t make me any less manly) and I think the color pink looks good on me (even manlier). But let’s not forget one of the most crucial things for V-Day, CHOCOLATE. No V-day is complete without this sweet magic. That being said, our V-day treats this year are Chocolate Dipped Strawberry Meringue Cookies.
For me, sending your valentines a box of chocolate dipped strawberries is just so blah. These Chocolate Dipped Strawberry Meringue Cookies are just the thing you need to wow you into the sheets. Well, you might have to put in a bit more leg work but it’s a start! This can be a fun activity to do with each other or with kids if you don’t have a babysitter for the night. They are simple, delicious and require very little ingredients. V-day doesn’t have to be extremely fancy to make a lasting impression! Let’s get started on these delicious Paleo Chocolate Dipped Strawberry Meringue Cookies!
Paleo Chocolate Dipped Strawberry Meringue Cookies:
3 – Large Free Range Egg Whites
¼ Cup – Honey¹
1 Tbsp – Stevia Powder
½ Tsp – Ice Water
½ Tsp – Vanilla Extract
½ Tsp – Strawberry Flavored Extract
¼ Tsp – Cream of Tartar
Pinch – Fine Salt
½ Cup – Enjoy Life Chocolate Miniature Chocolate Chips
Freeze Dried Strawberries (Crushed)
Equipment:
Parchment Paper
Note¹: If you would like a more white cookie, go for a clear syrup like Cassava Syrup
Chocolate Dipped Strawberry Meringue Cookies Instructions:
1.) For the Chocolate Dipped Strawberry Meringue Cookies, having a stand mixer will make your life so much easier. In the bowl of your stand mixer, mix together egg whites, salt, honey and stevia.
2.) Remove your bowl from the stand mixer and set it on top of a pot of boiling water like a double boiler setup.
3.) Stir constantly until the mixer is warm to touch (About 120°F).
4.) Immediately, add ice water, pop that back onto your stand mixer, and whip it on high until it starts to form a soft peak.
5.) Divide the meringue into two batches. Add vanilla extract to one and strawberry extract to the other.
6.) Preheat your oven to 180°F. While it preheats, whip the two batches of meringue (separately) until stiff peaks form.
7.) Line cookie sheets with parchment paper (dab a little meringue on each corner and it will stick the parchment to the cookie sheet).
8.) Fit the piping bag with the decorating tip, and fill one side of the bag with strawberry meringue mix and the other side with the plain meringue. By doing this, the meringue will come out swirled.
9.) Place in the oven and bake for around 1 1/2 hours or until the cookies are dry to the touch.
10.) Remove from the oven and cool on a wire wrack for at least an hour.
11.) Melt your chocolate. I suggest either using a double broiler or even using a hair dryer to avoid burning and to maintain the nice snap when you bite into the chocolate.
12.) From there, you can either dip your cooled cookies in the chocolate or drizzle it, depending on how much chocolate you desire. Garnish the top with crushed freeze-dried strawberries and after the chocolate has set, they are ready to consume, and consume them you shall!
