If you have ever traveled to the Midwest, you may have heard the old saying, “if you don’t like the weather, wait five minutes and it will change.” It’s true. One day you may wake up and it is 60 and cloudy and the next day you might as well have awoken in fiery depths of Mount Doom. I, personally, am not a huge fan of rainy weather and the weather so far this season has been soggy. Just plain soggy with an EXTRA side of soggy. I woke up this morning and much to my surprise, there was blue sky and sun! I couldn’t wait to start the day and so the morning routine commences. My girlfriend and I get woken up bright and early by our little boy as he talks loudly to himself and plays with his fingers in his room. We ate fruit for breakfast while listening to podcasts, like us old people do. The epic battle begins to dress a ten-month-old and it only took twenty minutes today. If you have never tried putting pants on a baby with crazy legs, wrestling a bear might be more manageable. As I swing open the front door with car seat in hand. A tremendous heat wave took over…do you remember in Terminator 2 when Sarah Connor is holding on to a chain linked fence and screaming at the people on the playground while a nuclear bomb explodes and the heat wave from the bomb turns her into a lump of coal? It was kind of like that. I was beginning to retract my longing for sunny days.
As the day progresses, I begin to think about dinner. To be honest, I think about dinner throughout the whole day. I would live my life like a hobbit if I could: breakfast, second breakfast, elevenses, luncheon, afternoon tea, dinner, supper. Because it is just so darn hot that even my eyelids are sweating, I want something light and refreshing. Nothing too heavy but satisfying and cooling. I decide on tacos. Now before you say, “tacos aren’t light and refreshing!” “Tacos aren’t paleo!” They certainly are now. We are making paleo shrimp tacos. Paleo soft tacos with grilled shrimp accompanied by a smoky chipotle slaw and a mango avocado relish. Shall we?
Paleo Tortilla:
1/3 Cup – Tapioca Starch
1/3 Cup – Otto’s Natural Cassava Flavor
1/3 Cup – Sifted Almond Meal
3 Tbsp – Coconut Flour
½ Cup – Unsweetened Nut Milk
½ Cup – Water
2 – Handsome Brook Farms Pasture Raised Eggs
Note: If you want convenience, I highly recommend using these Certified Paleo Tortillas: Siete Foods Tortilla
- First, I would make sure that the almond meal is sifted to get rid of all the bigger pieces. Then mix all of the dry ingredients together.
- Mix eggs, almond milk and water with the dried ingredients. Mix until the batter is not lumpy.
- Heat a nonstick skillet to medium heat with a very light coat of coconut oil.
- Pour a little less than ¼ cup of the batter into the preheated skillet. Distribute the batter in the pan thinly and evenly.
- Cook about a minute per side.
- You can brown the tortilla on the grill later. I would highly recommend this. It is SO good!
Grilled Shrimp:
1 lb – Fresh Shrimp(Peeled or unpeeled)
½ Tsp – Ground Cumin
½ Tsp – Ground Coriander
¼ Tsp – Garlic Powder
¼ Tsp – Toasted Onion Powder
¼ Tsp – Fresh Ground Black Pepper
1 Tsp – Salt
1.) Preheat your grill. I personally prefer a charcoal grill. With hardwood lump charcoal. The taste of a charcoal grill compared to a gas grill really makes a difference. Use a charcoal chimney and avoid starter fluid with all cost. Lighter fluid always taint the food’s flavor!
2.) Now, mix your shrimp with the spices provided above and let the shrimp marinate until your grill is nice and hot.
3.) Now grill your shrimps until they are slightly charred.
4.) Don’t forget to brown your tortillas!
Chipotle Slaw:
1 Pack – Precut Coleslaw
1 Cup – Paleo Mayo
½ Tsp – Ground Chipotle Pepper
½ Tsp – Smoked Paprika
½ Tsp – Toasted Onion Powder
½ Tsp – Garlic powder
1 Tsp – Palm Sugar (You can use white sugar if you want)
1 Tsp – Tobasco Chipotle Hot Sauce
To Taste – Salt and Pepper
- First things first, if you have not made Paleo Mayo (Recipe Coming Soon!), it is very easy to do and only requires very few ingredients. There are many variations of paleo mayo and you can do a quick google search and you will be well on you way.
- I recommend getting a pack of precut coleslaw because it will cut your prep time quit a bit.
- Once you have all your ingredients ready, put them in a mixing bowl and tossed them until they are all well mixed.
Mango Relish:
1 Whole – Mango (Diced)
1 Medium Sized – Avocado (Diced)
¼ Cup – Roughly chopped Fresh Cilantro (Do not substitute dried)
1 Tbsp – Fresh Squeezed Lime Juice
1 Tsp – Honey
- Start by mixing the lime juice and dissolving the honey in it for easier mixing.
- Now mixed the lime juice honey with the mango, avocado and cilantro.
- It’s time to assemble your your tacos, sit back, and enjoy!
